Because we enjoy good food from the depths of our soul. We cook out of passion, and have done so for more than 30 years, a main reason we became an organic-certified hotel. And those things that we love to eat and drink, we are eager to share with our guests. Regional. Seasonal. Organic. Catchwords, perhaps, but with us they melt on your tongue. This is the taste of a philosophy and a region, which has been named, with good cause, “the most delectable corner of Carinthia“.
We follow healthy human commonsense. And that leads us almost exclusively to organic-certified products. All inspected – several times a year by Austria Bio Garantie. Much comes from the region’s “bin-in-ordnung” producers. They are small producers from the immediate region, who are not organic-certified, but who we have known for years, whom we trust, and who put out wonderful products. Many of them you can visit.
After all, we are the world’s first Slow Food Travel Region – simply ask us for dates and addresses. Whatever we serve up, we describe clearly and transparently. Whether vegetarian or vegan, fish or meat, or base fasting. In every element of our daberer.culinary.enjoyment, at breakfast, lunch and dinner.
Small is beautiful, said renowned economist Ernst Friedrich Schumacher. We agree. Which is why you will find small organic wine growers on our truly exciting wine list – a passion of Christian Daberer.
Of course, almost all of our organic juices also come from small producers. The organic teas from Irschen, the “herb village”, from Lesachtal, Wernberg, and from Sonnentor. Beer from the Loncium brewery, whose draft beer is now also organic-certified, coffee from the San Giusto Organic Line. And our spring water, it comes from the Gailtal Alps. More precisely, it bubbles up right behind our house, available for you to enjoy for free throughout our hotel.
